I noticed that emails are sent even when my build is not in "finished" state. The notification is sent on timeout.
Do you have an idea of what could be the problem?

The purpose of the timeout is exactly to notify you even if the build is not finished. This is to avoid the case where something goes wrong with the builds of with the test infrastructure, the build never really finishes, and you don't get any news about it.
If your builds really take a long time to finish being tested, you need to increase the timeout from the default value.
